Caprese Salad. Mozzarella, tomatoes, vinaigrette, herbs. Yum!
Hi. It’s Lois in the kitchen at Recipe Idea Shop. Don made us some super scrumptious Homemade Mozzarella recently, and we used some of it with fresh homegrown tomatoes and our Simple Balsamic Vinaigrette to make an Italian salad. Often, when you order this salad in a restaurant, they serve it with fresh basil. It is terrific that way, too. We used Herbs de Provence for a little different flavor.
I think summer is the best time for this delicious salad because you can get fresh, vine-ripened tomatoes from the farmers’ market. In the winter, I would use cherry tomatoes and tiny marinated mozzarella cheese balls because they are both readily available from the grocery store all year round, and the cherry tomatoes have more flavor in the wintertime.
This special Caprese Salad can be an entree or a side salad. Add some nice Crusty French Bread, and it’s a main dish!
TOOLS FOR A WELL-EQUIPPED KITCHEN
Every kitchen should have the very best tools you can afford. At the least, buy yourself a good set of pans, a slow cooker, an Instant Pot, measuring cups and spoons, and the best set of chef’s knives you can afford. Also be sure to get a full sized food processor and a mini food processor. These tools are essential for any well-equipped kitchen!
Caprese Salad Recipe
Refreshing summer salad of mozzarella, tomatoes and vinaigrette.
- 4 slices mozzarella cheese (fresh is best)
- 4 slices home-grown tomatoes
- 1 green onion (white and tender green parts only, sliced)
- 2 tablespoons Simple Vinaigrette
- In a flat bowl, alternate the mozzarella and tomato slices, fanning them out to make them pretty.
- Sprinkle the green onion over the slices.
- Drizzle the vinaigrette over the salad.
- Serve immediately.
