Ingredients
1
tablespoon
olive oil
2
chicken breasts
boneless, skinless , 6 ounces each
2
cloves
garlic
minced
2
lemons
1 sliced and 1 zested and squeezed
1
onion
peeled and sliced
1
tablespoon
fresh tarragon
minced, optional
½
teaspoon
Salt
or to taste
¼
teaspoon
black pepper
¼
cup
grated Pecorino Romano or Parmesan cheese
Instructions
Spread the olive oil in the bottom of a baking dish.
Lay the onion slices atop the olive oil.
Place the lemon slices over the onion slices.
Lay the chicken breasts over the onion and lemon layers.
Sprinkle with salt, pepper, tarragon (if using), and minced garlic.
Bake for about 45-50 minutes until the chicken is cooked through.
Sprinkle with lemon zest and grated Pecorino Romano and return the pan to the oven for about 5 minutes.
Serve hot.
