Ingredients

  • 1/2 cup butter
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup dark brown sugar (or 1/2 cup white + 1/2 cup brown)
  • 1 egg
  • 1 1/4 cup gluten free flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Cream the butter, peanut butter, vanilla, and brown sugar.

  2. Beat in the egg.

  3. Add the flour, soda, baking powder and salt. Give the dry ingredients a quick stir to mix them before beating them into the sugar mixture.

  4. Beat the dry ingredients mixture into the sugars until thoroughly combined.

  5. Roll the dough into 1-inch balls and place on a baking sheet, three across and five down (that is, 15 balls spaced evenly over the baking sheet).

  6. Flatten the cookies with a fork in a crisscross pattern.

    Use a fork to make a crisscross pattern while flattening the cookie.
  7. Bake at 300 degrees for 15 minutes until turning just a bit brown, but still somewhat soft. Bake longer if you like them extra crispy.

  8. Remove cookies to a cooling rack and when cool, store in an air-tight container.
