Instructions
Preheat oven to 450F degrees.
Put the olive oil, maple syrup, thyme, paprika, salt and pepper in a small, deep bowl.
Heat the mixture in the microwave for 30 seconds and whisk to combine.
Combine all the veggies in a large bowl and pour the syrup mixture over them.
Stir the vegetables and make sure all the veggies are equally coated with the syrup.
For easy clean-up, cover a baking sheet with aluminum foil and spray the foil with baking spray or spread a little olive oil over it.
Put the veggie mixture on the oiled baking sheet and bake at 450F degrees for about 40 minutes, stirring gently every 15 to 20 minutes.
The vegetables will be nicely browned and tender when done.
Serve the veggies hot or at room temperature. Or add them to soups, stews and other recipes for enhanced flavor.
