Blueberry Compote. Simple to make. Excellent on Pancakes!

Blueberry Compote

Sweet and tangy sauce made from fresh or frozen blueberries.

Ingredients

  • 2 cups fresh or frozen blueberries
  • ΒΌ cup sugar
  • 3 tablespoon water
  • 2 teaspoon lemon juice
  • 1 cinnamon stick

Instructions

  1. In a small saucepan combine 1 cup of blueberries with all of the other ingredients.

  2. Bring to a boil over medium heat and, stirring frequently, cook for 15 minutes.
  3. The compote will start to thicken.
  4. Add the rest of the blueberries and continue to stir and cook for another 8 minutes.
  5. Remove from heat.
  6. Remove the cinnamon stick.
  7. Serve warm on buckwheat pancakes for breakfast or over ice cream for a snack or dessert.
  8. If you let it cool to room temperature or in the refrigerator, it will thicken more and you can spread it on homemade English muffins or on croissants.
