Ingredients

Annatto Oil
(easy to make!)

medium onion
(chopped)

white Basmati rice

teaspoon
cardamom

teaspoon
cinnamon

teaspoon
coriander
½
teaspoon
curry
½
teaspoon
cumin
¼
teaspoon
celery salt
¼
teaspoon
turmeric
⅛
teaspoon
cayenne pepper
(more if you like it hot)

cooked diced chicken

cup
brown raisins
Instructions
Heat the oil in a large pot (I used a Dutch oven).
Add about ¼ cup of rice and sauté until starting to turn brown.
Add the spices and cook for a minute or so to enhance the flavor.
Add the onion and sauté until transparent, about 5 minutes.
Add the water and the rest of the rice and cook until all the water is absorbed and the rice is tender, about 15-20 minutes.
Stir in the raisins and diced chicken and heat for a couple of minutes until heated through. Serve immediately.
