  • 2 T olive oil
  • 2 large leeks washed and chopped (white and tender green parts only)
  • 4 garlic cloves minced
  • 1 t fennel seeds
  • 1 fennel bulb sliced
  • 2 large white potatoes peeled and cubed
  • 2 15- ounce cans undrained petite diced tomatoes
  • 3 carrots peeled and diced
  • 1 15- ounce can Cannelini beans drained and rinsed
  • 3 tablespoons minced fresh tarragon
  • ¼ cup white wine vinegar

  1. Heat the olive oil in a Dutch oven or other large pot.
  2. Add the leeks, garlic, fennel bulb, and fennel seed and cook over medium heat, stirring occasionally, until the vegetables begin to soften, about 10 minutes.
  3. Add the tomatoes, carrots and potatoes.
  4. Cover and simmer until the vegetables are tender, about 20 minutes, stirring occasionally.
  5. Add the beans, tarragon and vinegar about 10 minutes prior to serving and continue cooking for 2-5 minutes.
