Ingredients

teaspoons
olive or canola oil
¼
cup
chopped shallots
3
cups
artichoke hearts
frozen & thawed or marinated and thoroughly rinsed
1
tablespoon
butter
1
cup
frozen peas
thawed
⅛
teaspoon
black pepper
2
tablespoons
parsley
1
teaspoon
dried mint
or 1 tablespoon fresh

lemon wedges
or 1 tablespoon lemon juice
Salt to taste
Instructions
Heat the oil and butter in a large skillet over medium heat.
Sauté the shallots until transparent.
Add the artichokes; sauté 4 minutes, stirring occasionally.
Add the thawed peas, pepper, parsley and mint.
Sauté 30 seconds to heat thoroughly.
Stir in lemon juice or serve with lemon wedges.
Eat immediately.
