Ingredients
2tablespoon Unsalted Butter
3Zucchinis, sliced
1smallSweet Onion, finely diced
3clovesGarlic, minced
2teaspoonItalian Seasoning
½teaspoonSalt
½teaspoonPepper
2cupsSwiss Cheese, freshly shredded
1cupMozzarella Cheese, freshly shredded
Instructions
Preheat your oven to 400℉ and grease your baking dish with extra butter.
Saute the onion and garlic in the butter in your skillet on medium heat for 2-3 minutes, then add in the zucchini and saute for another 7-10 minutes, stirring constantly, or until softened.
Remove from the heat and stir in the Italian seasoning, salt & pepper, and swiss cheese.
Transfer to your baking dish and sprinkle the mozzarella on top.
