Ground Beef Vegetable Soup With Diced Potatoes Recipe
This vegetable soup contains ground beef and rice along with spicy seasoning. You can adjust the recipe to your taste with more or less vegetables, beef, seasonings, etc. This soup goes well with a pan of homemade cornbread!

2lb.ground beef
3cupschicken broth
3medium potatoes diced or chopped
1can vegetables without potatoesalso can use frozen or fresh
1cupcooked rice,minute rice or regular rice
28ouncecan tomatoes in juice
8ouncecan tomato sauce
1teaspoonTony Chachere's Creole Seasoningmore or less to taste
Salt and pepper to taste

Instructions
Brown ground beef in a large Dutch oven or similar pot. Drain grease and juices after the beef is fully browned.
Dice potatoes and add the potatoes and chicken broth to the pot.
Bring the mixture to a boil and reduce heat to medium. Cook until the potatoes are tender. Usually takes 20 to 30 minutes depending on the potatoes.
Add canned vegetables, cooked rice, canned tomatoes, tomato sauce and seasonings to the pot and cook on medium or low for 20 minutes.
