Sweet Potato Pine Nut Salad

  • 1 sweet potato peeled and diced
  • 1 cup frozen peas thawed
  • 1/2 cup pine nuts toasted
  • 1/4 cup dried cranberries


  • 2 tablespoons honey (if you don't like it so sweet, reduce to 2 teaspoons)
  • 2 tablespoons dry white wine
  • 2 tablespoons olive oil
  • juice of 1 orange
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 shallot peeled and minced



  1. Steam the diced sweet potato for about 5 minutes, then add the peas and continue steaming until the peas are warm and the sweet potatoes are crisp tender, about 3-10 minutes. (Don't overcook.)

  2. Remove the sweet potatoes and peas to a medium-sized bowl and toss in the toasted pine nuts; stir to combine.


  1. Warm the honey for 10-20 seconds in the microwave.

  2. Add the olive oil, wine, orange juice, salt, pepper and minced shallot.

  3. Whisk until the vinaigrette is emulsified.

  4. Pour it over the salad and stir gently to combine.
  5. Serve warm or cold.
