Ingredients
Salad
1sweet potatopeeled and diced
1cupfrozen peasthawed
½cuppine nutstoasted
¼cupdried cranberries
Vinaigrette
2tablespoonshoney(if you don't like it so sweet, reduce to 2 teaspoons)
2tablespoonsdry white wine(optional, can substitute apple cider vinegar)
Steam the diced sweet potato for about 5 minutes, then add the peas and continue steaming until the peas are warm and the sweet potatoes are crisp tender, about 3-10 minutes. (Don't overcook.)
Remove the sweet potatoes and peas to a medium-sized bowl and toss in the toasted pine nuts; stir to combine.
Vinaigrette
Warm the honey for 10-20 seconds in the microwave.
Add the olive oil, wine, orange juice, salt, pepper and minced shallot.
Whisk until the vinaigrette is emulsified.
Pour it over the salad and stir gently to combine.
