Slice a small slice off the bottom of the tomato so it sits flat on your plate.
With a pairing knife, cut the stem and hard core out of the tomato, slicing around the center of the tomato, leaving about 2 inches on the outside. You should be making a hole in the tomato big enough to fit the amount of chicken salad you want to put in it.
Stuff the chicken salad into the hole and garnish with sliced green onion tops or parsley. (Alternatively, you can use egg salad or tuna salad as a stuffing.)cc
