mashed potatoes

red pepper
(diced, about 1 cup)

diced tomatoes
(drained)

hamburger

pepper

teaspoon
dried thyme
½
teaspoon
dried oregano

cup
Pecorino Romano cheese
(or Parmesan, shredded)

Mozzarella cheese
(shredded)

Instructions
Preheat oven to 350F degrees.
Spray a 7” x 9” glass baking dish with cooking spray.
Spread the mashed potatoes evenly in the baking dish.
Heat the olive oil in a sauté pan over medium heat.
Sauté the onions and peppers for about 5 minutes.
Spread the onions and peppers over the mashed potatoes.
Next, layer the tomatoes over the previous layers.
Sprinkle half the Pecorino Romano and Mozzarella over the layers.
Crumble and fry the hamburger in the sauté pan until brown all the way through.
Add the salt, pepper, thyme and oregano to the hamburger and mix thoroughly.
Spread the hamburger mixture over the previous layers in the baking dish.
Top with the remaining cheeses and bake at 350F degrees for about 30-40 minutes until hot all the way through.
