Ingredients

olive oil

small yellow onion
chopped

baby carrots
halved lengthwise

small potatoes
white or red, halved and quartered

cloves
garlic
minced

can black beans
drained in a colander and rinsed

cups
vegetable stock

bay leaf

dry white wine

soy sauce

teaspoon
dried thyme
salt and pepper to taste
use sea salt for corn free

spinach or other dark leafy greens

Instructions
Heat the oil in a medium skillet over medium heat.
Add the onion and cook until transparent, about 5 minutes.
Transfer the onions to a 4-6 quart slow cooker.
Sauté the carrots, and garlic in the skillet (about 5 minutes) and transfer them to the crockpot.
Add all the other ingredients except the spinach to the crockpot.
Stir.
Cover and cook on high for 6 hours.
About 15 minutes before serving, add the spinach to the crockpot.
