Ingredients

molasses

honey

sherry vinegar

teaspoon
sea salt

small shallot
(minced, or substitute 1 clove garlic, minced)

tablespoons
toasted chopped pecans
(optional)

teaspoon
white pepper

extra-virgin olive oil

Instructions
Put the molasses and honey in a small bowl and microwave for 30 seconds. Then whisk to combine.
Add the vinegar, salt, shallot, pecans and pepper and whisk to combine.
Add the olive oil and whisk.
Taste and adjust sweetness as desired.
Use immediately or store at room temperature for up to three days.
Makes about 1 cup.
Notes
Hint:
When mincing shallots, you can peel them, cut them in half and use a garlic press to get them just the right size.
