These Peanut Butter Oatmeal Balls are a quick, no-bake snack made with wholesome oats, creamy peanut butter, and a touch of sweetness. Perfect for meal prep, breakfast on the go, or an energy-boosting snack, they're easy to make and loved by both kids and adults.
In a large mixing bowl, add the honey and peanut butter. Microwave for 10-15 seconds. Mix to combine.
Add in the Chia seeds. Mix well.
Add the rolled oats. Mix until all ingredients are well combined.
Fold in the chocolate chips.
Refrigerate for 15-20 minutes to allow the mixture to firm up.
Use a small cookie scoop (2 teaspoons), and scoop the mixture into balls.
Place on the prepared plate. Refrigerate or freeze until the balls are firm or ready to use. I keep mine in the freezer.

Baking Tips!
To line a plate with parchment paper, as the balls will be easier to release once they are frozen.
Peanut Butter: I used smooth peanut butter; you can use crunchy as well. You can also use natural peanut butter, as this is a no-bake recipe.
I warm the peanut butter and honey together for just a few seconds, no need to heat them for long. This quick warming softens them, making all the ingredients much easier to mix smoothly.
Have fun with the recipe: Add some chopped nuts like walnuts, pecans, or peanuts.
Use a different nut butter
The mixture will be sticky. If it feels dry, add 1-2 tablespoons of honey. However, if it feels too sticky, add some oats, 1-2 tablespoons.
When shaping the balls, if it feels too sticky, wet your hands with water. Roll the dough in the palm of your hand, and apply slight pressure when rolling into a ball.
Store the balls in an airtight container in the refrigerator or freezer until you are ready to use them. They will store 1-2 weeks in the refrigerator and up to 3 months in the freezer.
