5ouncesParmesan Cheese
36Club Crackers
½pound Baconthin sliced
⅓-1/2cupBrown Sugar

Instructions
Preheat the oven to 325°F.
Grate the Parmesan cheese, set aside.
Cover baking sheet with parchment paper.
Place a wire rack on top of the baking sheet and spray rack with nonstick cooking spray.
Line the crackers in a single layer on top of the wire rack.
Sprinkle parmesan cheese on top of each cracker.
Cut the bacon strips to fit top of crackers and place one piece of bacon on each cracker.
Combine the brown sugar and cayenne pepper in a small bowl, then top each cracker with about a teaspoon of the sugar mixture.
Bake for about 20-25 minutes or until the bacon is browned and crisp to your liking being careful not to over brown the crackers.
Loosen the crackers from rack before they cool.
Cool completely and allow to harden before serving.
Notes
Be sure to carefully loosen the crackers from the rack as soon as they come out of the oven and then let them cool or they will become stuck and be hard to get off of the rack without breaking the crackers.Crackers will be softer straight out of the oven, but will harden after cooling. These crackers tend to taste better if they are allowed to cool and harden before serving.It is important not to skip using the wire rack, the crackers do not cook as well if cooked straight on the baking sheet.
