    Chow Mein Noodle Haystacks With Peanuts, Chocolate, and Peanut Butter

    I like this haystack candy recipe because the variations are endless. You can make haystacks with almond bark, chocolate chips, butterscotch chips, peanuts, chow mein noodles, mini marshmallows and more additions or subtractions than I can mention here.

    I bet some of you guys have made haystacks and have ingredient ideas for me. For this candy I used chocolate almond bark, peanut butter, dry roasted peanuts, and chow mein noodles. 

    I should have added mini marshmallows because they are my youngest granddaughter's favorite.

    Don't those look yummy? They take about 5 minutes to mix up and 30 to cool. The kids love to find these in their lunch boxes.

    How To Make Chow Mein Noodle Haystacks

    Ingredients

    I always use dry roasted peanuts with salt because the salt adds an additional tasty element to the mix. And I switch up using creamy peanut butter and chunky peanut butter.

    Mixing It Up

    This recipe is really flexible. I added one cup of peanut butter here but have used less. I don't think I would use more than one cup because it would overpower the chocolate.  And, you can also leave the peanut butter out completely.

    Once you add the peanuts and chow mein noodles to the chocolate mix, stir until the nuts and noodles are completely covered. You might even add more noodles, nuts, or both if you feel there is enough chocolate mixture to coat them completely.

    How to finish and store

    Even though I used parchment paper on my cookie sheet I still sprayed the paper with cooking oil to be on the safe side.

    I use a cookie sheet because I like to pop the haystacks into my refrigerator's freezer until the candy sets. Of course it depends on how much room you have in your freezer. 

    Drop the candy by spoonfuls, and if you are into perfection, then make them look nice and round, but I just drop them, and they look a little wild.

    Store them in an airtight tin canister (holiday-themed). You can put the canister in the refrigerator and the candy will be cold and crunchy. Put the canister on the countertop, and the candy will be soft but still crunchy. It just depends on the texture you prefer. 

    Chow Mein Noodle Haystacks 

    Ingredients

    • 1 lb. Chocolate Flavored Almond Bark  - 8 squares
    • 1 cup Peanut Butter
    • 1 can Chow Mein Noodles
    • 1 ½ cups Salted Dry Roasted Peanuts

    Instructions

      • Melt almond bark in the microwave in 30-second increments. Stir between increments. It should take about 2 minutes to melt, depending on your microwave.
      • Add peanut butter and mix well.
      • Stir in chow mein noodles and peanuts.
      • Drop by spoonful onto parchment paper or a greased cookie sheet.
      • Let cool and store in an airtight container.

    Notes

    You want to cover the nuts and noodles entirely with the chocolate peanut butter mixture. You should be able to do that with the ingredient amounts listed. You can always add extra peanuts and noodles if the mixture seems thin. There is no way you can mess up this recipe. 

    Variations

    Use a mix of peanuts, chow mein noodles, and mini marshmallows or peanuts and marshmallows only. Just adjust the added ingredients as needed. 

    Vary the amount of peanut butter in the recipe, or use crunchy peanut butter instead of creamy.
