You can make haystacks with almond bark, chocolate chips, butterscotch chips, peanuts, chow mein noodles, mini marshmallows, and more mix-ins than I can list here.
I should have added mini marshmallows to them today because they are my youngest granddaughter's favorite.

How To Make Chow Mein Noodle Haystacks

Ingredients
I always use dry roasted salted peanuts because the salt adds an extra tasty element to the mix. I also like to switch between creamy and chunky peanut butter.

Mixing It Up
This recipe is very flexible. I added one cup of peanut butter here but have often used less. I wouldn’t use more than one cup because it can overpower the chocolate. You can also leave the peanut butter out completely if you prefer.

Once you add the peanuts and chow mein noodles to the melted chocolate mixture, stir until the nuts and noodles are completely coated. If it looks like there is still plenty of chocolate, you can add more noodles, more nuts, or a little of both.

How to Finish and Store
Even though I line my cookie sheet with parchment paper, I still give the paper a quick spray with cooking oil just to be on the safe side.
I use a cookie sheet so I can pop the haystacks into my refrigerator’s freezer until the candy sets. Of course, this depends on how much room you have in your freezer.
Drop the candy by spoonfuls. If you love perfection, you can shape them into neat, round haystacks. I usually just drop them and let them look a little wild.

Store the haystacks in an airtight holiday-themed tin canister. If you keep the canister in the refrigerator, the candy will be cold and crunchy. If you store it on the countertop, the candy will be softer but still crunchy. It all depends on the texture you prefer.
Chow Mein Noodle Haystacks
Ingredients
- 1 pound chocolate-flavored almond bark (8 squares)
- 1 cup peanut butter
- 1 can chow mein noodles
- 1½ cups salted dry roasted peanuts
Instructions

- Melt the almond bark in the microwave in 30-second increments, stirring between each increment. It should take about 2 minutes to melt completely, depending on your microwave.

Add the peanut butter and stir until well combined.
- Stir in the chow mein noodles and peanuts until they are fully coated.
- Drop the mixture by spoonfuls onto parchment paper or a greased cookie sheet.
- Let the haystacks cool completely, then store them in an airtight container.
Notes
You want to completely cover the nuts and noodles with the chocolate-peanut butter mixture. The ingredient amounts listed should allow you to do that. If the mixture seems thin, you can always add extra peanuts and noodles. There’s really no way to mess up this recipe.
Variations
Try a mix of peanuts, chow mein noodles, and mini marshmallows, or use just peanuts and marshmallows. Adjust the amounts of the add-ins as needed so everything is well coated.
Vary the amount of peanut butter in the recipe, or use crunchy peanut butter instead of creamy for extra texture.
