My young granddaughter introduced me to these sweet chocolate covered Ritz peanut butter crackers last holiday season. She made them at home and then made a batch at my house.
I couldn't get her to make them for me this year, so I did. Making candy for the family and friends is a tradition for me. I also make Martha Washington chocolate balls, chocolate haystacks, and coconut chocolate bars. Anyone see a theme here?
The process to make this treat is so simple and takes no time at all.
I used crunchy peanut butter for the cookies, but creamy peanut butter is great, too. Although I like crunchy peanut butter for most things, I think I prefer creamy peanut butter for this recipe. I pulled the crunchy peanut butter out of the cabinet by mistake and didn't notice until I started spreading it on the crackers.
I am listing the recipe below but I will also walk you through the process with step-by-step photos.
Chocolate Covered Ritz Peanut Butter Crackers
Ingredients
1 large sleeve Ritz Crackers
Peanut Butter, crunchy or smooth
3 squares or 6 ounces Chocolate Almond Bark
Directions
Melt Almond Bark in the microwave in 30-second increments. It should take about a minute and a half to melt completely.
Spread peanut butter onto Ritz cracker and cover with another cracker so you have a Ritz cracker peanut butter sandwich.
Dip the Ritz cracker sandwich in melted Almond Bark and cover completely.
Set dipped crackers onto a greased cookie sheet or parchment paper to set chocolate.
You may place it in the freezer for a few minutes to help set the chocolate.
Store in an airtight container.
The ingredients for this recipe are things I normally keep in the pantry. We love peanut butter mixed with syrup on our toast in the mornings. Have you ever tried that?
The first thing to do is spread peanut butter on a Ritz cracker. The photo above shows peanut butter on the crackers. I didn't spread the peanut butter very thick, but I made a thicker layer of peanut butter on later crackers!
Then you just stack another cracker on top of the peanut butter to make a Ritz sandwich.
I usually use 3 squares of chocolate almond bark for one large sleeve of Ritz crackers.
Melting the chocolate in the microwave is easy just don't try to melt it for 2 minutes straight. The chocolate might seize on you. Melt the bars in 30-second increments. It should take no more than a minute and a half. Stir well during increments because this helps to melt the chocolaate.
Dip the Ritz peanut butter sandwiches in the chocolate and cover them completely.
Hold the chocolate dipped crackers over the chocolate bowl and let a bit of it drain from the cookies.
Lay the crackers on parchment paper or a greased cookie sheet. As you can see the chocolate on my crackers is not real smooth and neat like some I've seen but they still taste the same!
The chocolate will harden if you just leave the cookies on the counter, but I slip them in my refrigerator freezer for a few minutes. That is one reason I use a cookie sheet or parchment paper on the cookie sheet, so I can slip them in the freezer.
And they are so yummy. I store them on the counter but if your home is really warm you may want to refrigerate the cookies.
I actually like them a little soft and creamy.
