Wow! Vinaigrettes and Other Dressings by Michele Anna Jordan (Harvard Common Press, 2013) is spectacular. Every recipe I have tried has been packed with flavor and easy to make.
The suggestions for unique salads and interesting ways to use the dressings are wonderful, too. For instance, the author’s suggestion for Sweet Potato, Onion and Pecan Salad with Molasses and Honey Vinaigrette (shown on page 69) is beautiful, unique and filling. Unfortunately, she doesn’t give the recipe for the simple salad. I looked at the picture and created my own recipe (shown above), roasting the sweet potatoes to bring out the flavor. The author’s recipe looks like the sweet potatoes are steamed. I’m sure it would work either way.
