I like chicken spaghetti, but I'm not a fan of the chicken. I would rather have the noodles and cheese. So I made simple cheesy spaghetti without the chicken.
For this quick meal, stir up a bowl of Rotel and Velveeta Cheese dip. While the cheese dip is in the microwave, boil a single serving or a family-size portion of spaghetti noodles. Mix a couple of spoonfuls or more of cheese dip into your noodles, and that's it!
I have a couple of tips and suggestions for spicing it up. This recipe consists of three ingredients and takes about 15 minutes to make!

I "created" this simple recipe a few months ago while visiting Dad. For his supper, he would have a package of peanut butter and crackers about 4:30. That is all he wanted, and he said he had to eat his night meal early so he didn't get indigestion.
Well, I can't eat that early, so I would find something to eat around 6:30. Going through the refrigerator for leftovers or sandwich fixings, I spotted the cheese dip. That is when the idea hit.
I made my cheesy spaghetti a few more times after that when I was in Arkansas visiting Dad. I sure miss him.

I prefer Angel Hair Pasta, but any pasta would work for this recipe, so use your favorite.

To make the cheese dip, combine one can of Rotel (I use original) and 1 pound of Velveeta. Cut the Velveeta into small slices in a medium-sized bowl, pour the Rotel over the cheese, and microwave until the cheese is melted.
Microwave the ingredients in 1- to 2-minute increments, stirring between each, until the cheese is completely melted and combined with the Rotel.
While the microwave is doing its job, boil your pasta.


I like mine to taste cheesy but not too gooey.

Suggested Modifications:
- Substitute a can of Hot Rotel for the can of Original Rotel. Or use a combination of the two for a touch of heat.
- Add chopped rotisserie chicken to the mix (an easier recipe for chicken spaghetti)
- Add crispy fried Spam to your cheesy pasta.
- Spice it up with garlic powder, Italian seasoning, Tony Chacheres Cajun seasoning, or your favorite spices.
This is a yummy, comforting treat. Serve it as a side dish with a fried pork chop. I love pork chops, especially the thinly sliced ones, battered with flour and fried just till done.
Don't fry meat dishes too long. When I was growing up, my Mom fried meat until it was bone dry. It was a different time.

Ingredients
- 1 can Rotel
- 1 pound Velveeta Cheese sliced
- 2 ounces Angel Hair Pasta
Instructions
Make The Cheese Dip
- Add sliced Velveeta to microwave safe bowl.
- Microwave the cheese and Rotel mixture in 1-2 minute increments, stir thouroughly after each.
- Continue until the cheese is melted and the ingredients are mixed well.
Cook The Noodles
- Bring a medium size pan of water to a boil.
- Add a teaspoon of salt to the water.
- Add Angel Hair Pasta or your favorite type of pasta to the boing water and cook until Aldente.
- Strain water from pasta and add cheese dip to taste, stir thouroughly. Serve.
- Recipe can be adjusted to serve 6-8 people. Just cook more pasta.!
