    Baked Zucchini and Swiss Cheese Casserole

    Equipment Needed: 

    • Large Skillet (10.25 inch with tall sides, or larger) 
    • Spatula 
    • 8 inch by 8 inch dish 

    Ingredients: 

    • Unsalted Butter 
    • Zucchini
    • Sweet Onion
    • Garlic, minced 
    • Italian Seasoning 
    • Salt 
    • Black Pepper 
    • Swiss Cheese 
    • Mozzarella Cheese

    How to Make Cheesy Zucchini Casserole

    1. Preheat your oven to 400℉ and grease your baking dish with extra butter. 
    1. Saute the onion and garlic in the butter in your skillet on medium heat for 2-3  minutes, then add in the zucchini and saute for another 7-10 minutes, stirring constantly, or until softened. 
    1. Remove from the heat and stir in the Italian seasoning, salt & pepper, and swiss cheese.

    1. Transfer to your baking dish and sprinkle the mozzarella on top. 
    1. Bake for about 20 minutes, or until the top starts to golden. 
    1. Serve and enjoy!

    What is the best way to store leftovers and reheat?

    The best way to store leftovers is in the fridge in an airtight container for up to 3 days. Reheat in the microwave, or in the oven at 350℉ until warm. 

    Should there be liquid in the skillet after cooking?

    Yes, zucchini is full of water, when it’s cooked the water releases, and that water ends up at the bottom of the skillet. 

    How will I know the zucchini is done cooking in the skillet? 

    The zucchini will be done cooking on the skillet when it starts to soften, around 10 minutes. 

    How will I know when this dish is done baking in the oven?

    The top of the cheese will start to golden, just as it does on pizza, this is your cue that the zucchini casserole is done baking. 

    Should this dish be greasy? 

    Yes, due to the large amount of cheese, this casserole will become greasy.
