    Hamburger And Rice Casserole Made With Canned Soup

    This family favorite hamburger and rice casserole is made with 2 kinds of creamy condensed soup and seasoned to taste. Serve it with a side salad and toasted bread for a delicious 3-course meal, or just have a helping of casserole.

    This recipe was passed down from my sweet mother-in-law. It contains chopped celery, but I sometimes leave it out because I'm not a fan. That is the beauty of this dish - it can be tweaked to your taste. I have more suggestions after the recipe info.

    Ground Beef And Rice Casserole Recipe

    The ingredients for the dish are ground beef, cooked rice, a can of cream of chicken soup, a can of cream of mushroom soup, chopped onion, chopped celery, and seasoned salt or your choice of seasoning.

    Ingredients:

    • 1 lb ground beef
    • 2 -3 cups cooked rice
    • 1 tablespoon butter
    • 1 teaspoon Chicken bouillon
    • 1 can of cream of mushroom soup
    • 1 can of cream of chicken soup
    • ½ small onion, diced fine
    • ¼ cup celery, chopped fine
    • Seasoned Salt or Salt and Pepper to taste

    Instructions:

    • Boil the rice according to package directions and add the chicken bouillon and butter to the water.
    • Sauté the celery until it begins to soften, then add the onion and continue sautéing until the onion is translucent.
    • Add the ground beef to the pan and brown until cooked through. Drain the grease from the pan.
    • Add cooked rice, the two soups, and seasoning.
    • Pour into a greased casserole dish and bake at 350 degrees for 35-40 minutes or until it is bubbly in the middle.
    • If you like cheese. top with grated cheese during the last 5 minutes of cooking.

    You don't need to season the rice when cooking, but I do because I cook extra and save it for soups or as a side dish. I boil the rice with a bit of butter, chicken broth, and sometimes salt. 

    After stirring all your ingredients together in a large skillet, heat them well, then pour them into your baking dish. It will shorten the baking time.

    My husband likes cheese on top of his casserole, so I sometimes put a couple of American cheese slices on it about 5 minutes before it's done. You could also sprinkle it with shredded cheese.

    We usually eat our casserole with a slice of toasted French bread, but sometimes we just have the casserole as our meal.

    Variations on the recipe:

    Use 2 cans of either cream of mushroom or cream of chicken soup, not both kinds.

    Substitute the chopped celery for a can of condensed celery soup and only one can of mushroom or chicken soup.

    Substitute cooked chicken for the ground beef. Rotisserie, boiled, or canned chicken works.

    Top with cheese as I mentioned earlier.

    Leave out the celery, or maybe add chopped bell peppers.

    I made the casserole twice in the past 10 days! I use our small toaster oven when possible instead of turning on the big one. Although it is as cold as it is now, I would appreciate the heat from the big oven.

    Be sure to spray your casserole dish with cooking spray to make cleanup easy.
