These yeasty cinnamon rolls are filled with butter, cinnamon, brown sugar, and strawberries. My mouth is watering just writing about them.
While the dough is rising, the smell of yeast reminds me of cooking in the kitchen with my grandmother when I was small. She made the best cinnamon rolls!
I don't remember her ever making strawberry cinnamon rolls but these are very similar to her basic rolls....just with strawberries!
Cinnamon rolls have to be one of the best comfort foods. When just out of the oven the ooey gooey roll with soft melty frosting makes you feel warm all over.
Strawberry Cinnamon Rolls With Pink Frosting
Serve these delicious rolls for breakfast, or a snack, or pack them in your lunch.
Preparation time: 30 minutes
Resting time: 30-40 minutes
Servings: 9 large rolls or 12 smaller rolls
Equipment:
Ingredients:
¾ cup of milk
2 tablespoons of dry yeast
3 cups of self-rising flour (extra for sprinkling)
1 tablespoon of cinnamon (extra for sprinkling)
2 eggs
4 tablespoons of brown sugar
1 stick of melted butter
½ cup of diced strawberries
Ready-made pink icing (any brand)
1. Heat the milk in a small saucepan until it is warm but not boiling. Remove from heat and sprinkle
the dry yeast over the milk. Allow it to sit for 5 minutes until the yeast becomes activated and foamy.
2. In a large mixing bowl, combine the self-rising flour, ½ tablespoon of cinnamon, and 2
tablespoons of brown sugar. Mix well, then add the eggs and the activated yeast mixture to the dry
ingredients. Mix until a sticky dough forms.
3. Transfer the dough onto a floured surface and knead it for approximately 5 minutes until it
becomes smooth and elastic.
4. Place the dough inside a bowl and cover it with a kitchen towel. Allow
the dough to rise for approximately 30-40 minutes in a warm location.
5. Preheat the oven to 375°F (190°C). Grease a baking dish or line it with parchment paper. Punch
down the risen dough and roll it out into a rectangular shape on a floured surface.
6. Brush the melted butter over the rolled-out dough. Sprinkle the sliced strawberries, remaining brown sugar, and
cinnamon evenly over the buttered dough.
7. Starting from one of the longer sides, tightly roll the dough into a log shape. Use a sharp knife to
cut the log into 9 or 12 equal-sized rolls.
8. Place the rolls in the prepared baking dish. Bake in the
preheated oven for 15-20 minutes or until the rolls are golden brown.
9. Drizzle or spread the pink frosting over the warm cinnamon rolls, allowing it to melt and coat the tops. If the icing is thick and hard to drizzle or spread, put it in a microwavable bowl and soften it for 10 to 20 seconds.
10. Garnish with additional sliced strawberries. Serve warm and enjoy your delicious Valentine

Note: These rolls are best enjoyed fresh but can be stored in an airtight container for up to 2 days
Variations to the Cinnamon Rolls
Frosting:
Make homemade frosting with cream cheese and powdered sugar or a thin powdered sugar glaze to drizzle over the rolls.
The Rolls:
Add raisins to the roll filling. Raisins are a good source of iron!
Add pecans, walnuts, or your favorite nuts.
Make peanut butter and jelly rolls by spreading these ingredients over the dough before rolling it up.
Substitute various fruits for the strawberries.

Warm leftover rolls in the microwave. The time will vary by microwave but usually 10 seconds will do the trick.
