Mango Ginger Chicken is simple and tasty
Don here. I was looking for a summery marinade for chicken breast I’m grilling tonight. Paging through one of our Thai cook books, I found a recipe for Stir Fry Chicken and Mango. Not wanting to have a stir fry but being intrigued by the ingredients, I decided to create a marinade for our grilled chicken. This marinade was enough for 4 large boneless, skinless chicken breasts. The combination of the sweet mango, sesame oil, vinegar, lime and spices is super delicious.
It's an easy recipe, but plan about 2 hours to let it marinate. Or you can marinate it overnight and cook it the next day if you prefer. Try the marinade on fish or pork also. It is quite versatile.
What You Need
For this recipe, you will need a knife, cutting board, microplane grater, measuring cups and spoons, a flat casserole dish, skillet, and either an outdoor grill or an indoor grill. Get yourself the best tools you can afford and you'll never be sorry.
Mango Ginger Chicken Recipe
Ingredients
Marinade
- 1 tablespoon freshly grated ginger
- 2 cloves garlic minced, about ½ teaspoon
- ½ teaspoon red pepper flakes more if you like it spicy
- 3 tablespoons toasted sesame oil
- 3 tablespoons rice vinegar
- 1 tablespoon lime juice
Mangoes & Chicken
- ½ cup thinly sliced dried mango
- 4 small chicken breasts about 6 ounces each
Instructions
Mix
- Put all ingredients except the mango and chicken in a small bowl and mix well with a whisk.
Marinate
- Place the mango and chicken in a single layer in a flat casserole dish.
- Spoon the marinade over the chicken and mango.
- Cover and refrigerate for at least 2 hours before cooking.
Grill & Make Sauce
- Place the chicken breasts on your medium-hot outside grill (gas or charcoal), grilling for 10 minutes a side or on a George Foreman Indoor Grill for a total of 6 minutes.
- Pour the marinade that remains in the casserole dish, along with the mangoes, into a skillet.
- While the chicken is cooking, heat this residual marinade and mango over medium heat until boiling. Continue cooking to reduce the liquid by half to thicken the sauce.
- Remove the chicken from the grill. Spoon the sauce over the the chicken and serve hot.
