Vinegar Chicken, or Saturday Chicken as we call it in Virginia, tastes like the wonderful chicken you can buy from the nonprofit organizations who brine, grill and sell it every Saturday. Simple recipe, a little sweet, salty and vinegary. Yum!
Just 4 ingredients and 30 minutes is all you need. It is especially good when you use legs and thighs, which are inexpensive and come already cut up for you. How easy is that?
What You Need
For this recipe, you need measuring cups, a large bowl or container, and a grill. You can use an indoor or an outdoor grill to cook the chicken. Remember, when you buy your kitchen tools, be sure to buy the best you can afford. You will never be sorry.

Vinegar Chicken Recipe
This chicken tastes just like the juicy, salty, slightly vinegary chicken you buy from the Ruritans or the Fire Department.
- 6 chicken legs or thighs (with skin on)
- 2 1/2 cups apple cider vinegar
- 1/3 cup salt
- 1/3 cup brown sugar (or more if you like it sweeter)
Preheat your grill to 500F degrees.
Mix the vinegar, salt and sugar until the salt and sugar disolve to make a brine.
Lay the chicken in a large bowl or dish, skin side down, and pour the brine over the chicken, completely covering it.
Let the chicken sit in the brine for 10 minutes.
Spray your grill cooking grate with oil to keep the chicken from sticking to it.
Remove the chicken from the brine and cook it on your grill using the indirect method (no heat directly under the meat) for 10 minutes a side until the juices run clear.
