Vinegar Dressing is delicious over bitter lettuce or a salad of cucumbers and onions.

Vinegar Dressing for Bitter Lettuce (or Vinegar Sugar Dressing) is terrific over freshly picked lettuce.

Vinegar Sugar Dressing is quick, easy and tasty.

What dressing do you put over bitter lettuce? My mom always used this vinegar and sugar dressing. It’s a simple salad dressing that takes just a couple minutes to make. Only four ingredients.

You can use white vinegar or apple cider vinegar. I usually use white vinegar. Mix in the sugar, and add the salt and pepper. When I use turbinado sugar, I warm the vinegar dressing for 30 seconds in my microwave; it helps the sugar dissolve. Whisk to make sure it is well combined.

Sounds great, but what is “bitter lettuce”? I have certainly eaten salad greens that were bitter but hadn’t heard this term.

I consider bitter lettuce things like endive, chard and kale, especially endive. It tastes bitter to me. Some wild lettuce is considered bitter. This dressing is excellent on leaf lettuce, too. Thanks for asking, Elizabeth.
