Grilled sweet potato medallions are almost good enough for dessert.
Don here telling you about a simple recipe for Grilled Sweet Potatoes that everyone is sure to like. Grillin' is my specialty. I like to take some veggies, add a few spices and grill 'em up. For sweet potatoes, I wash them, peel them, cut then into about ¼-inch medallions, toss them in the spices and a little oil, and then grill them. They are ready to eat in about 30-40 minutes. Delicious!
The combination of spices in this recipe is perfect. Lois thought they were terrific, too.
What You Need
For this recipe, you need a vegetable peeler, knife, cutting board, measuring spoons, grill and grill vegetable basket. I grill the vegetables in a GrillPro 98121 Porcelain Coated Square Wok Topper, and it works great. Just spray it with a little vegetable oil before you add the veggies so they don't stick. I love my gas grill. You might like it, too.
Grilled Sweet Potato Medallions Recipe

Ingredients
- 2 small sweet potatoes peeled and cut in rounds about ¼" thick
- 2 tablespoons olive oil
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon kosher salt
Instructions
- Put the sweet potato slices in a bowl.
- Add the olive oil and mix.
- Sprinkle with cinnamon, nutmeg and salt.
- Mix to coat.
- Grill over medium heat in a vegetable basket for about 20-30 minutes, stirring occasionally, until beginning to brown.
