This old-fashioned Marshmallow Fluff chocolate fudge filled with nuts is one of my favorite homemade candies. It's easier to make than you might think, but there's a trick to making it turn out perfectly.

I love everything chocolate and have a long list of recipes I'm trying. From brownies to cake, chocolate chip cookies, truffles, mousse, cupcakes, and ice cream, there's no shortage of chocolate desserts I want to try.

My mom made lots of candy at Christmastime; it's one of the many things I miss about her. One of my favorites was her chocolate fudge... mmmm.. so good! It is really scrumptious with a good cup of coffee!

What's the Trick to Making Homemade Fudge

Making this fudge is tricky because if you don't cook it long enough, the sugar stays grainy, and if you cook it too long, it burns. The trick is to use a double boiler and stir frequently.

One recipe I found said to cook it until it reaches 238F degrees, but I usually cook it until it seems done. Most people can't do that, so I have included step-by-step instructions. I must admit, I usually make mine in the microwave. Unless you are really good at melting things in the microwave, I suggest you stick to the double boiler method.

    What You Need

You need measuring cups and spoons, a candy thermometer, a double boiler, a knife, and a cutting board (assuming you put the nuts in the candy). And of course, Marshmallow Fluff, which I mentioned above.

    Marshmallow Fluff Chocolate Fudge Recipe

Mom used the recipe from the back of the Marshmallow Fluff jar, but this is my chocolate fudge version.

    Ingredients

    • 4 ½ cups sugar
    • 1 can evaporated milk (8 ounces)
    • ½ cup butter
    • 24 ounces chocolate chips
    • 2 squares baker's chocolate (2 ounces total)
    • ½ pound milk chocolate bar
    • 2 teaspoons vanilla
    • 1 teaspoon salt
    • 1 cup chopped walnuts or other nuts
    • 1 7.5 ounce jar Marshmallow Fluff

    Directions

    Stovetop Directions

    • Put about 3-4 inches of water in the bottom of your double boiler.
    • In the top part of the double boiler, add sugar, milk and butter. Put the top part of the double boiler on top of the bottom part.
    • Over medium heat, bring the sugar, milk, butter mixture to a boil and let it boil for 5 minutes. Watch and stir this constantly as it burns easily!
    • When the candy thermometer reaches 238F degrees, remove from heat and stir in the remaining ingredients. The chocolate will melt as you stir it.
    • Beat the candy mixture with a wooden spoon until the candy thickens.
    • Pour into an 8" x 8" x 2" buttered pan.
    • Cool and cut into 2" squares.

Microwave Directions: Be super careful as this burns easily.

    • Microwave the first three ingredients on high for 3 minutes.
    • Stir.
    • Microwave on high for 4 minutes.
    • Stir.
    • Add chocolate chips, milk chocolate and Baker's Chocolate and stir.
    • Microwave on high for 2 minutes. Stir.
    • Add the remaining ingredients and beat with a wooden spoon until the candy thickens.
    • Pour into an 8" x 8" x 2" buttered pan.
    • Cool and cut into 2" squares.
