This Chocolate Fudge is full of chocolate and nuts. And it's one of my favorite homemade candies. It's easier than you think, but there's a trick.
I love everything chocolate and have a long list of recipes I'm trying. From brownies, to cake, chocolate chip cookies, truffles, mousse, cupcakes and ice cream, there's no shortage of chocolate desserts to try. This coconut oil fudge is quick and easy, and totally guilt-free, since it's vegan, dairy-free and gluten-free. You should try it next time you need a treat for your sweet tooth.
Anyway, back to the chocolate fudge I'm sharing today.
Chocolate Fudge
My mom made lots of candy at Christmastime; it's one of the many things I miss about her. One of my favorites was Chocolate Fudge: mmmm.. so good! Just think how scrumptious this would be with a good cup of coffee!
I believe Mom used the recipe from the back of the Marshmallow Fluff jar, but I have never compared the two recipes. I usually make everything from scratch, but I have no idea how you would make Marshmallow Fluff. Do you? Comment below and I'll try your recipe.
What's the Trick?
It's a little bit tricky to make Donna's Chocolate Fudge because if you don't cook it long enough, the sugar stays grainy, and if you cook it too long, it burns. The trick is to use a double boiler and stir frequently.
One recipe I found said to cook it until it reaches 238F degrees, but I usually just cook it until it seems done. I know most people can't do that, so I have included step-by-step instructions. I must admit, I usually make mine in the microwave. Unless you are really good a melting things in the microwave, however, I suggest you stick to the double boiler method.
What You Need
You need measuring cups and spoons, a double boiler, a knife and a cutting board (assuming you are putting the nuts in the candy). And of course, Marshmallow Fluff, which I mentioned above.

- Microwave on high for 2 minutes. Stir.
- Add the remaining ingredients and beat with a wooden spoon until the candy thickens.
