Flank Steak Salad makes an elegant meal.
Flank Steak Salad takes about 10 minutes to whip together if you have leftover flank steak or 25 minutes if you have to cook the steak. And doesn’t it look amazing? I used fresh mixed lettuces, grape tomatoes, cucumbers, a bit of onion, and a couple slices of orange bell pepper as my base salad.
Then I added a few slices of warmed up flank steak, and topped it all with some awesome gorgonzola blue cheese made by monks in Canada. I have never been a big blue cheese fan, but this cheese changed my mind. OMG. It is so freaking good. Your salad will still be good without it. Add a little feta or parmesan instead. But really, get yourself some gorgonzola.
Why Flank Steak?
Flank steak is a nice, lean steak that cooks quickly on the grill. You slice it real thin on an angle. I like mine cooked medium rare. It’s excellent and tender. When you warm it up for the salad, it will no longer be medium rare, of course. Or, you can eat it cold on the salad. Your choice. What You Need
You need a good carving knife, a chef’s knife, cutting board and some beautiful dinnerware for this recipe. If you are making your own salad dressing, you will also need measuring cups and spoons. Do yourself a favor and get the best kitchen tools you can afford. You’ll never be sorry.

Flank Steak Salad Recipe
A simple green salad with mixed vegetables, topped by sliced flank steak and blue cheese, makes an elegant meal.
Ingredients
- 4 cups mixed lettuces (washed and spun dry)
- 8 grape tomatoes (whole or cut into quarters)
- 1/4 bell pepper (cut in thin strips or diced, your preference)
- 1/2 cup cucumber (cut in thin slices or into bite-sized pieces)
- 1/4 sweet onion (cut in thin slices or diced)
- 12 ounces flank steak (already cooked and cut in thin slices, about 3-4 slices per person)
- 1 tablespoon olive oil
- 1/4 cup gorgonzola blue cheese (crumbled)
Instructions
Attractively place the lettuce on a dinner or luncheon plate.
Scatter the tomatoes, cucumber slices, onion, bell pepper (and any other vegetables you wish to add) over the top of the lettuce.
Heat the oil in a skillet over medium heat. Add the flank steak slices and cook for about 1-2 minutes until just starting to brown a little. Then turn the slices over and warm the other side 1-2 minutes.
Place the warm meat slices over the salad.
Top with crumbled gorgonzola blue cheese.
Serve with your favorite salad dressing.
