How To Make Spicy Bacon Crackers

You can use your favorite crackers instead of Town House crackers, though the bacon fits almost perfectly on the club cracker shape and not as well on round or rectangular crackers.
Gather your ingredients:

- 1 block (5 ounces) Parmesan Cheese
- Town House Crackers (enough to cover baking rack, about 36 crackers)
- ½ pound Thin Sliced Bacon
- ⅓-1/2 cup Brown Sugar
- ¼ teaspoon Cayenne Pepper

- 1. Preheat the oven to 325°F.
- 2. Grate the Parmesan cheese, set aside.
- 3. Cover baking sheet with parchment paper.
- 4. Place a wire rack on top of the baking sheet and spray rack with nonstick cooking spray.
- 5. Line the crackers in a single layer on top of the wire rack.
- 6. Sprinkle Parmesan cheese on top of each cracker.

7. Cut the bacon strips to fit top of crackers and place one piece of bacon on each cracker
8. Combine the brown sugar and cayenne pepper in a small bowl, then top each cracker with about a teaspoon of the sugar mixture.
9. Bake for about 20-25 minutes or until the bacon is browned and crisp to your liking being careful not to over brown the crackers.

9. Loosen the crackers from the rack before they cool.
10. Serve after cooling or place in a storage container.
Notes:
Loosen the crackers from the rack immediately after baking to prevent them from sticking and breaking.
Crackers will be softer when warm, but will harden after cooling. These crackers tend to taste better if they are allowed to cool and harden before serving.
It is important not to skip using the wire rack, the crackers do not cook as well if cooked flat on the baking sheet.
How should I store them?
Store any leftovers refrigerated in an airtight container, up to 3 days.
Can I make this ahead of time and freeze it?
This recipe does not freeze well, but can be made the day before planning to serve.
Are there any substitutions that I can make?
Red pepper flakes may be substituted for cayenne pepper.
For a spicier version, add a pickled jalapeño slice to the top of each cracker before baking.
Pre-grated parmesan cheese can be substituted for a block, this can save time as you will not have to grate it yourself.
