Recipe Idea: Peach Galette (Tart)
Don here. Ah, summer time. The peaches at the farmer’s market are lucious. Bite into one and the sweetness explodes in your mouth as the juice drips off of your chin. Time for a peach tart. This simple, elegant dessert is the perfect last course to any summer meal. It’s especially good shared with friends sitting on the back porch as the sun sets and the crickets begin their nightly song. You can make the crust ahead. And the peaches can be peeled and tossed with the spices and sugar to season for a couple of hours while you prepare the rest of the meal. The tart can be served warm or at room temperature.
- 4 to 6 ripe peaches. enough for 2 Cups or a little more
- 2 to 3 T sugar
- 1 t cinnamon
- 1 t fresh ground nutmeg
- 1 sweet pastry crust for a tart
- 1 T melted butter
- Preheat the oven to 350F.
- Peel the peaches.
- Slice them in half and remove the pit; then slice the halves into 4 to 6 sections.
- Toss the peaches with the sugar, cinnamon, and nutmeg and refridgerate, covered, until the crust is ready.
- Depending on the natural sweetness of the peaches you may need more or less sugar. Oops, too sweet? Add a little lemon juice.
- Roll out the pie crust to about 10 inches round. Place the crust in the center of a baking sheet.
- Spread the peaches with spices on the crust to within and inch and a half of the edge.
- Fold the edge of the pastry back over the peaches, pleating as necessary.
- Brush the edge of the crust with the melted butter. Don’t worry if some drizzles onto the peaches.
- Bake for 60 minutes or until the crust is golden brown and peach juice thickens and bubbles. Remove from the oven and let it cool a bit if you want to serve it warm.
- Or let it rest at room temperature until you are ready to serve it.
- Slice it into 6 or 8 wedges.
