Recipe Idea: South African Crockpot Bobotie
Hi. It's Lois in the kitchen at Recipe Idea Shop. Since Don was going to be out of town yesterday and I had a committee meeting at my house beginning at 7:15, I decided to make a new slow-cooker recipe. This one was flavorful and is an excellent as a side dish. The texture is similar to stuffing. Try serving it with steamed veggies and a nice salad.
This recipe originally came from Fresh from the Vegetarian Slow Cooker by Robin Robertson. The recipes in this cookbook are incredibly good.
South African Crockpot Bobotie Recipe

- 2 tablespoons olive oil
- 1 large yellow onion chopped
- 1 tablespoon curry powder
- 1 bag vegetarian burger crumbles
- 4 cups diced gluten free bread cubes
- 16 dried apricots chopped
- ⅛ teaspoon black pepper
- 1 ½ cups hot water
- 2 vegetarian bouillon cubes
- ⅓ cup apricot jam
- ⅓ cup almond butter
- 1 tablespoon fresh lemon juice
- ¼ cup sliced almonds toasted (for garnish)
Directions
- Dice the onion and cook it over medium high heat with the olive oil until softened.
- Add the curry powder and stir to coat.
- Transfer this mixture to a 4-quart slow cooker.
- Add the burger crumbles, bread cubes and pepper.
- Stir to combine.
- Put the bouillon cubes in the water, along with the apricots.
- Set aside for about 10 minutes.
- In a blender or food processor, combine the jam, almond butter, lemon juice and vegetable stock mixture.
- Pour this mixture into the crockpot and stir to combine.
- Cook on low for 4 hours.
- Sprinkle with toasted almonds to serve.
