Balsamic Vinaigrette
Do you make your own salad dressing? It's super easy. Let me tell you about a terrific Balsamic Vinaigrette. It's scrumptious on salad, but you don't want to stop with that. The dressing is made of olive oil, balsamic vinegar, honey, Dijon mustard, shallot, anchovy paste, and some herbs. It takes a few minutes to make and tastes WAY better than store-bought.
We had some beautiful Portobello Mushrooms and decided to grill them with this Vinaigrette. They were super yum!
The vinaigrette originally comes from Michele Anna Jordan's Vinaigrettes and Other Dressings (affiliate link) cookbook. The shallots and garlic, along with the honey, make this salad dressing nearly irresistible. I mince my shallots using a garlic press (affiliate link), which makes it very easy.
I absolutely love it over Portobello Mushrooms. (For an even easier option, try Simple Balsamic Vinaigrette.)
What You Need
You'll need a deep bowl (affiliate link) or a 2-cup glass measuring cup (affiliate link, a wire whisk (affiliate link), measuring cups and spoons (affiliate link). And a cruet (affiliate link) is nice. That's it. And some wonderful dinnerware, of course.

Balsamic Vinaigrette Recipe

Ingredients
- 1 shallot minced
- 1 garlic clove minced
- ½ teaspoon anchovy paste omit for vegan
- 3 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 2 teaspoons honey
- 2 teaspoons Dijon mustard
- 1 teaspoon Italian seasoning or any combination of oregano, basil and thyme
- Sea salt to taste
- ¼ teaspoon freshly ground black pepper
Instructions
- Whisk all of the ingredients in a small bowl or measuring cup.
- Use immediately or refrigerate, covered, up to a week.
- To use on grilled Portobello mushrooms or other veggies, simply drizzle over the vegetables and grill for about 5-6 minutes a side. Amazing!
