I had never heard of purple potatoes until 2016 when Don and I received some in our CSA veggie crate from the local farmer. Don grilled them, along with some zucchini and a couple of Grilled Lamb Chops, and we enjoyed a scrumptious dinner. We both LOVED the potatoes. Creamy on the inside, crispy on the outside. And gorgeous!

What You Need
For this recipe, you need a knife, a cutting board, a big bowl, and some kind of basket to use for grilling. Don loves his vegetable grill basket. It makes grilling any veggie so easy. Spray it with a little cooking spray before you add the vegetables and they won't stick.
Grilled Purple Potatoes Recipe

Ingredients
- 2 medium purple potatoes
- 2 tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon ground pepper
Instructions
- Wash and slice the potatoes into spears (about ¼ inch wide)
- Put the potato spears in a bowl and add the oil, salt and pepper.
- Stir to coat.
- Cook the potatoes in a vegetable basket on a medium high heat grill, stirring occasionally, for about 30-40 minutes until crisp on the outside and soft on the inside.
