I love Pecan Pie, don't you? Since it's National Pecan Month, I'm telling you about my friend's Louisiana Pecan Pie. Elizabeth Cottrell of Heartspoken submitted this version of her family's Pecan Pie. (Thank you, Elizabeth.) The recipe came from her husband's aunt, Jeanne Cottrell, who was from a Cajun family in southwest Louisiana.
My friend's Louisiana Pecan Pie is a little different than Don's Famous Favorite Pecan Pie, the recipe we always use at our house.
What Makes It Louisiana Pecan Pie?
This pie recipe has a little less corn syrup and more eggs than Don's version. It doesn't take as long to bake it; it is baked in a slow oven (350F degrees) for 30 minutes until firmly set. Don's pie takes at least 45 minutes. Elizabeth adds, " You can finely chop the pecans, but Aunt Jeanne preferred a combination of whole pecans and pieces. Aunt Jeanne's handwritten recipe card says that honey can be substituted for corn syrup, but I've never tried that."

For this recipe you need measuring cups and spoons, a pie plate, unbaked pie shell (Don likes the ones in the dairy aisle), and pecans, of course.
Louisiana Pecan Pie Recipe

- ¾ cup white Karo corn syrup
- ¼ cup butter (or margarine)
- 3 eggs (well beaten)
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 cup pecans (chopped, halves or a combination of chopped and halves)
- 1 Unbaked pie shell
Directions
- Heat oven to 350°F.
- Cream syrup with butter.
- Add sugar and eggs.
- Beat all thoroughly, then add vanilla and pecans.
- Pour into unbaked pie shell and bake in slow oven (350) for about 30 minutes until well set.
