Stuffed Tomatoes

Stuffed Tomatoes are delicious for lunch or as an appetizer.

Stuffed with chicken salad, egg salad or tuna, these Stuffed Tomatoes can be an appetizer or main dish.


Units Scale
  • 24 grape or cherry tomatoes (or one large tomato if you are making it a main dish)

Tarragon Chicken Salad Stuffing

  • 1 12.5ounce can cooked chicken (drained)
  • 2 tablespoons Miracle Whip Salad Dressing (or mayonnaise)
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon dried tarragon leaves (or 1 tablespoon fresh tarragon, chopped)
  • 2 stalks celery (chopped)
  • 2 green onions (white and tender green parts only, sliced small)


  1. Slice a small slice off the bottom of the tomato so it sits flat on your plate.
  2. With a pairing knife, cut the stem and hard core out of the tomato, slicing around the center of the tomato, leaving about 2 inches on the outside. You should be making a hole in the tomato big enough to fit the amount of Chicken Salad you want to put in it.
  3. Stuff the Chicken Salad into the hole and garnish with sliced green onion tops or parsley. (Alternatively, you can use Egg Salad or Tuna Salad as a stuffing.)
