Yellow Rice with Raisins (and chicken) is beautiful, flavorful and easy (35 minutes).
Have you ever eaten Yellow Rice? Do you wonder how they get the rice to be that nice yellow color? It’s the annatto oil and turmeric, spices that many African and Latin cultures use. This Yellow Rice with Raisins and Chicken is a simple, one-pot dish. Add a salad and it’s the perfect easy meal.
Raisins add a bit of sweetness and all the spices make the dish very flavorful. I used canned chicken, which made the meal super simple. I have an all-purpose Dutch oven that I use to make everything from soup to casseroles. I love it. This is a Dutch oven:
You can make your own Annatto Oil with seeds or buy it ready made. It doesn’t add much flavor, but it colors the rice a pretty yellow or orange if you add enough oil.
What You Need
You’ll need a good pot, measuring cups and spoons, and of course some annatto oil. Whatever you buy, buy the best. You’ll never be sorry. And while you’re at it, get some lovely dinnerware.
Yellow Rice with Raisins Recipe
Yellow Rice with Raisins
Yellow Rice with Raisins. Light flavors. Rich color. Easy to make.
- 2 tablespoons Annatto Oil (easy to make!)
- 1 medium onion (chopped)
- 2 cups white Basmati rice
- 1/2 teaspoon cardamom
- 1/2 teaspoon cinnamon
- 1/2 teaspoon coriander
- 1/2 teaspoon curry
- 1/2 teaspoon cumin
- 1/4 teaspoon celery salt
- 1/4 teaspoon turmeric
- 1/8 teaspoon cayenne pepper (more if you like it hot)
- 4 cups water
- 1/2 cup cooked diced chicken
- 1/2 cup brown raisins
- Heat the oil in a large pot (I used a Dutch oven).
- Add about 1/4 cup of rice and sauté until starting to turn brown.
- Add the spices and cook for a minute or so to enhance the flavor.
- Add the onion and sauté until transparent, about 5 minutes.
- Add the water and the rest of the rice and cook until all the water is absorbed and the rice is tender, about 15-20 minutes.
Stir in the raisins and diced chicken and heat for a couple of minutes until heated through. Serve immediately.
