Although I do try to eat in-season, locally grown foods, sometimes, I just want something light, refreshing and different. Here's a salad I love, and it bursts with fresh flavor. Don and I love it. Fennel Orange Cucumber Salad only takes a few minutes to make, and it pairs well with just about any meal.
Since we live in the U.S., we have access to fresh fruits and vegetables all year long. Most come from North America, including Mexico. We are so blessed here in the States. Are you able to get fresh, local fruits and vegetables all year round?

Fennel Orange Cucumber Salad Recipe
Ingredients
- 1 fresh bulb fennel washed thoroughly and sliced in strips
- 2 navel oranges peeled and cut in small sections
- ½ cucumber sliced in rounds and quartered
- Juice of ½ an orange (about ¼ cup)
Instructions
- Mix all of the ingredients together and serve immediately.
- If you prefer, add some Brianna's Poppyseed Dressing.
