This simple Sweet Spinach Salad with Mandarin Oranges takes about 5 minutes to make and satisfies your craving for both crunchiness and sweetness.
The salad has only four ingredients and takes just a couple minutes to throw together. I try to keep small containers of Mandarin oranges on hand to add that sweetness to salads and casseroles. The complete salad is light, refreshing and good for you.
Do you eat a salad every day? No? Neither do I, but I aspire toward that goal. A good salad can provide wonderful fiber, vitamins and iron, and loads of other nutritional benefits. Salads have been known to lower blood sugar and blood pressure, too.
The nice, deep green spinach provides lots of Vitamin K (good for preventing heart disease, clotting your blood, and building strong bones) and essential minerals, and the oranges add vitamins, folate, potassium, and sweetness. Cucumbers and celery provide the crunch. We like to add Brianna's (vegan) Poppyseed Dressing (affiliate link) to this salad.
Serve it with a delightful, Grilled Spatchcocked Chicken and you have an amazing meal. I think you're gonna love it.

Ingredients
- 2 cups baby spinach
- 1 stalk celery diced
- ½ cucumber diced
- 1 6- ounce container of Mandarin orange slices drained
Instructions
- Place all the ingredients on a plate in an attractive manner.
- Top with your favorite salad dressing or a squeeze of lemon juice.
