    Watermelon Olive Mint Salad With Feta Is Salty & Sweet!

    This Watermelon Salad (with olives and feta cheese) is an awesome summer salad. The kalamata olives made this salad the best watermelon salad I have ever had. When I made it the first time, I thought it was so good, I ate the whole bowl for lunch.

    Did you know that August 3 is National Watermelon Day? It's time to make this salad again!

    Recently, I have been focused on using mint in everything because my potted spearmint is growing in leaps and bounds. Plus, I really like the herb. I prefer spearmint to peppermint, but I like both. Which do you like best? Mint means summer to me. It's refreshing and satisfying.

    The Mediterranean Diet uses a lot of mint. Have you noticed this? Mint with lamb, eggplant, watermelon, beans. So many uses. I also make a simple Iced Mint Tea. It's refreshing and caffeine free. Yum!

    Such a Tasty Combination

    This Watermelon Olive Mint Salad with Feta recipe is similar to Watermelon Cucumber Mint Salad, which is also super good, but I like today's recipe too because the kalamata olives add an interesting, salty flavor to the dish. I looked online to see how others make similar salads and saw that some include kalamata olives. What an inspiration! Watermelon Olive Mint Salad is a little bit sweet and a little bit salty with a hint of mint. What a delicious combination.

    What You Need

    No special tools are needed for this recipe. I used a chef's knife (affiliate link), paring knife, cutting board, measuring cup and spoons, a small whisk, and a large bowl. What's the tool you can't live without? And sometimes you just need something fun, right?

    Ingredients
     

    • 2 cups watermelon cubed
    • ¼ cup sliced sweet onion
    • 12 kalamata olives whole, pitted
    • 4 tablespoons feta cheese crumbled
    • 2 tablespoons olive oil
    • 3 tablespoons chopped fresh mint I used spearmint
    • 1 tablespoon lemon juice
    • ¼ teaspoon salt
    • ¼ teaspoon hot paprika or cayenne pepper

    Instructions
     

    • Put the watermelon, onion, and olives in a medium bowl.
    • In a 2-cup measuring cup or a small bowl, mix the olive oil, mint, lemon juice, salt, and hot paprika until well blended.
    • Pour the dressing over the watermelon mixture.
    • Top with crumbled feta cheese, and stir gently.
