Roasted Peaches are positively mouth-watering. And oh, so beautifully simple!
Roasted Peaches
Don picked up some fresh peaches at the Mennonite grocery store last week. They weren't quite ripe, so we had to let them ripen a bit on the counter. Be sure they don't touch each other when you are doing this, or they will spoil. When they were almost ripe, he decided to bake them in the oven with some orange juice, honey, olive oil, and spices, an idea he got from an Autoimmune Protocol (AIP)-compliant ice cream recipe by HealingFamilyEats.com.
The Roasted Peaches were scrumptious, and they are dairy-free and gluten-free. Don added some spices, and quite frankly, since I do not follow a strict AIP diet, I don't know if the spices are compliant. But they were super easy and tasty.
What You Need
You will need a knife, cutting board, measuring cups and spoons, a small bowl, and a baking dish. I have a spice rack organizer with pull-out drawers, and I absolutely love it. I can always find my spices. Whatever kitchen tools you buy, be sure to get the very best you can afford. You'll never be sorry.

Roasted Peaches

Ingredients
- 4 fresh peaches
- ½ cup orange juice
- 2 tablespoons olive oil
- 2 tablespoons honey
- ¼ teaspoon cardamom
- ¼ teaspoon nutmeg
- ¼ teaspoon cinnamon
Instructions
- Preheat the oven to 375°F.
- Whisk the orange juice, olive oil, honey, cardamom, nutmeg, and cinnamon together.
- Pour a little of the orange juice mixture into a baking dish (a tart pan works well).
- Wash, cut in quarters (or halves) and remove the pits of the peaches.
- Place the peaches inside up over the orange juice mixture. Drizzle the remaining juice mixture over the peaches.
- Bake in a 375°F oven for about 35 minutes until the peaches are soft and the juices look like syrup.
