Corn and Broccoli make the best fresh-from-the-garden meal. The only thing that would make it better would be some sliced tomatoes. And a cream puff from State Fair, of course.
Corn, Broccoli and a Side of Tomatoes make a perfect summer meal.
Don and I try to eat fresh vegetables as much as we can throughout the year, but it's so much easier to get local, organic fruits and vegetables in the summertime, isn't it? We participate in a wonderful community sponsored agriculture (CSA) subscription, which works out great for us. Every week, we pick up a small crate of fruits and veggies from the farmer. We love it. Sure, occasionally we have too many zucchinis or something, but usually it's perfect. In this pandemic, it's a blessing. We seldom have to go to the grocery store.
Corn is plentiful right now and we are happy! Boiling corn, steaming a little broccoli and slicing a tomato takes about 20 minutes. It's a wonderfully economic vegan meal. We do top our corn with butter, I must admit. The nutrition in this meal is super. Lots of protein, low in carbs, and if you avoid the butter, low fat. And even with butter, this meal is less than 300 calories.
What You Need
The only tools you need for making this meal is a pot with a vegetable steamer, a pot big enough to fit the corn (or break it in half like I did), and a good tomato slicer knife you can use to slice tomatoes (we inherited one from Don's mom). The blade on the tomato knife is important. If you want to be more efficient, you could use a bigger steamer pot, and put the corn in the bottom with the water, boil it for 10 minutes, add the steamer basket with the broccoli in it, and boil for 2 minutes more until the broccoli is still crisp tender and bright green. Then you only use one pot!

Corn, Broccoli & a Side of Tomatoes Recipe

Ingredients
- 2 cups broccoli florets
- 2 ears corn
- 1 large tomato
- 2 tablespoons butter
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Shuck the leaves and corn silk from the corn.
- Wash the corn and cut out any bad spots.
- Break the corn in half if you need to fit it in a smaller pot.
- Put the corn in a pot of water and bring the water to boil.
- Boil for about 10-12 minutes until the corn brightens in color and is fully cooked.
- In the meantime, set up your vegetable steamer, add the broccoli to the steamer basket, and bring the water to a boil.
- As soon as the steamer water begins to boil, turn the burner off. Let it sit for up to 5 minutes before serving.
- Serve corn with butter and salt and pepper. In my opinion, the broccoli is delicious without any toppings. Serve with sliced tomato for a complete meal.
