    South Beach Lime Ricotta Creme is tasty and satisfying. No sugar and no cooking. This South Beach Diet phase one recipe is super easy. is a sweet dessert with only four ingredients. It takes about 5-7 minutes to make. Trust me, you're going to love this.

    I do the South Beach Diet occasionally because I find it easy to lose 5 to 10 pounds in two weeks. I seldom make it past Phase One, but all the recipes I have tried on this diet are good.

    I don't have as much luck as the men do with weight loss; I generally lose 5-7 pounds and the men 10 pounds or more. But what the heck? Five pounds isn't bad.

    And the diet seems to reset my metabolism while also getting rid of residual joint pain. I don't know if it's all the salads I eat on the diet (sometimes two a day) or the fact that I'm not eating any sugar. Alas. I tend to think it is the latter. Eventually, I slip back into having desserts with sugar. I'm not sure why. It must be a brain thing.

    What You Need

    Seriously, you need measuring cups, spoons, a bowl, and a wire whisk or spoon. But I use my mini food processor to make it nice and smooth, and I have a micro-planer to zest the lime. Since it takes only a few minutes to make, you might as well have a wonderful cup of coffee or tea with your dessert.

    If you aren't on the diet, have a nice aperitif with your creamy dessert. What a combination. On Phase One, you can't have alcohol, but you can have this dessert anytime. You don't have to be on a diet.

    I didn't think lime with ricotta cheese would be good, but I was surprised. It's yummy. Do give it a try.

    Lime Ricotta Cheese

    Ingredients

    • 1 cup part-skim ricotta cheese
    • zest of one lime about ½ teaspoon
    • ¼ cup lime juice
    • ½ teaspoon vanilla extract
    • 2 individual packages Sugar substitute Splenda, about two teaspoons

    Instructions

    • Mix all the ingredients until well blended. (I use my mini food processor.)
    • Chill for at least ½ hour before serving.
