South Beach Mocha Ricotta Creme is one of my favorite South Beach Diet recipes. Creamy chocolate with a little coffee flavor, who wouldn't like that?

South Beach Mocha Ricotta Creme is like Tiramisu without the wafers. Well, almost. You know what I mean.
South Beach Mocha Ricotta Creme is a treat you will love.
It's a delicious no-cook pudding that you can make in about 5 minutes. And South Beach Mocha Ricotta Creme is a diabetic-friendly dessert that is sweet and satisfying, yet low in sugar. Don and I found it in The South Beach Diet cookbook. It's not especially low in calories, but it is low in carbs. Each serving is 260 calories and contains 17 g of fat, but that's lower than most desserts. I think of it as Ricotta Pudding.

I added a little more cocoa to this version. Yum!
South Beach Diet Works
Don loves the South Beach Diet. It works great for him. In Phase One, he generally loses 12-15 pounds. The diet is comprised of recipes made with whole foods. The first phase limits the number of starchy vegetables and fruits, and lets you eat other vegetables along with lean meats. That's a good way to eat! The recipes are delicious, too. I don't have such good luck with this diet. It helps maintain my blood sugar, but I seldom lose much weight. On the other hand, I don't gain weight, either, so when Don does the diet, I do it too.
If you are considering a diet, we highly recommend this one. The recipes are good and Mocha Ricotta Creme is no exception. Try it, and let us know what you think.
What You Need
For this recipe, you need measuring cups and spoons. I use my mini food processor to mix it until smooth. If you don't have one, I suggest you get one. You also need sugar substitute like Splenda.

South Beach Mocha Ricotta Creme
Ingredients
- ½ cup part-skim ricotta cheese
- ½ teaspoon unsweetened cocoa powder
- ¼ teaspoon vanilla extract
- 1 package sugar substitute Splenda
- Dash espresso powder or instant coffee
- 5 mini chocolate chips
Instructions
- Mix together the ricotta, cocoa powder, vanilla extract and sugar substitute until smooth. It's easiest to use a mini food processor for this.
- Serve chilled in a dessert bowl, topped with a dusting of espresso powder and mini chocolate chips.
