Recipe Idea: South Beach Mocha Ricotta Creme

Hi. It’s Lois in the kitchen, talking about South Beach Mocha Ricotta Creme, a delicious no-cook pudding. This is a good, diabetic-friendly dessert; its sweet and satisfying, and low in sugar. Don and I found it in The South Beach Diet cookbook. It’s not especially low in calories, but it is low in carbs so it is diabetic-friendly. Each serving is 260 calories and contains 17 g of fat, but that’s lower than most desserts. I think of it as Ricotta Pudding.
Don love the South Beach Diet. It works great for him. In Phase One, he generally loses 12-15 pounds. The diet is comprised of recipes made with whole foods. The first phase limits the number of starchy vegetables and fruits and sticks with lean meats. That’s a good way to eat! The recipes are delicious, too. I don’t have such good luck with this diet. It helps maintain my blood sugar, but I seldom lose much weight. But I don’t gain weight, either, so when Don does the diet, so do I.
If you are considering a diet, we highly recommend this one. The recipes are good and Mocha Ricotta Creme is no exception. Try it, and let us know what you think.

- 1/2 cup part-skim ricotta cheese
- 1/2 teaspoon unsweetened cocoa powder
- 1/4 teaspoon vanilla extract
- 1 package sugar substitute
- Dash espresso powder
- 5 mini chocolate chips
- Mix together the ricotta, cocoa powder, vanilla extract and sugar substitute until smooth.
- Serve chilled in a dessert bowl, topped with a dusting of espresso powder and mini chocolate chips.
