Don here, telling you about a South Beach Diet-inspired chicken recipe, Savory Chicken Saute. I think savory means robustly delicious, and cooked with interesting spices. This meal was prepared with dried tarragon (affiliate link) and rosemary leaves. Dried spices are more flavorful than fresh. You need less dried than you would need fresh. Using fresh spices makes the flavoring a little more subtle.
I would have used fresh herbs in this recipe if they were available, but dried spices work fine. Our tarragon and rosemary are not producing at this time of year, but both plants come back to life in the spring if the winter isn't too harsh. Which herbs winter over for you?
The idea for this recipe came from The South Beach Diet by Arthur Agatston, MD (affiliate link). Great diet for me. I can lose about 5 pounds a week during the first two weeks and with discipline, keep it off for a while. It is like a mix of the Mediterranean Diet, the Keto Diet and the Eat Clean Diet. What You Need
As we always say, buy the best kitchen tools you can afford. If you buy good ones, they will last a lifetime. For this recipe, you only need knives, a cutting board, measuring spoons and a good saute pan (affiliate link). We also depend on our olive oil dispenser. It's so handy.
Savory Chicken Sauté Recipe
Ingredients
- 2 tablespoons extra virgin olive oil
- 6 chicken tenders
- 1 medium onion chopped into medium pieces
- 2 cloves garlic minced
- 1 teaspoon dried rosemary leaves or 1 tablespoon fresh rosemary leaves, chopped
- ½ teaspoon dried tarragon or 2 teaspoons fresh tarragon, chopped
- ½ cup white wine
- salt and fresh ground pepper to taste
Instructions
- Heat the oil in a skillet over medium heat.
- Sauté the chicken tenders in the oil for about 4 minutes.
- Turn them over. (They should be browned.)
- Add the onion and garlic.
- Cook for 3 minutes or so until the onion just begins to soften.
- Add the rosemary, tarragon and wine.
- Cover and cook for about 5 minutes until the onion is tender-crisp.
- Season with salt and pepper.
