    Sautéed Zucchini With Caramelized Onions & Toasted Almonds

    You can sauté Zucchini in a matter of minutes and the addition of caramelized onions and toasted almonds makes this dish heavenly. This vegetable side dish only has 4 ingredients but you can always spice it up with your favorite herbs or seasonings.

    Sautéed Zucchini makes a great side dish.

    This recipe hits the spot any day of the week. I love onions that are sautéed until they are a deep rich brown color. That makes them what chefs call "caramelized." Caramelized onions add a delicious flavor to vegetables and meats, tangy and a little bit sweet, they are just plain yummy. Sauté everything and enjoy.

    Have you ever had French Onion Soup? The onions are always caramelized in this soup. (And you can make Caramelized Onions in a slow cooker! Easy peasy.) In this case, I dice the onions to cook them. Usually, I slice onions for caramelizing because they are prettier. But dicing makes it easier. There are only 4 ingredients. It's a terrific side dish for any meal.

    What You Need

    The only tools you need for this recipe are a good knife, I like to use a Chef's Knife (affiliate link), a cutting board (affiliate link), measuring cups  (affiliate link), and spoons  (affiliate link), and a skillet (affiliate link). I suspect you have all of these items on hand, but if you don't have a good set of pans, it's time to get some.

    Ingredients
     

    • 1 tablespoon olive oil
    • ¼ cup diced onions
    • 1 small zucchini sliced in rounds
    • ¼ cup sliced almonds

    Instructions
     

    • Heat the oil, add the onions and sauté until transparent.
    • Add the zucchini and continue cooking until the onions are browned and the zucchini is starting to brown a bit.
    • Toast the almonds in a toaster oven until browned. (Be careful, they burn easily.) Or, you can toss them in the skillet and brown them on top of the stove.
    • Mix everything together and serve immediately.
