Chicken Sausage and Cabbage Stir Fry is a recipe that is in permanent rotation at our house, especially in the fall. I love sausage, don't you? But regular sausage is very high in fat and not particularly good for you. Along comes Chicken Sausage. The sausage is lower in fat (only 6g per link) than pork sausage. Hooray!
There are now available several types of better-for-you sausage. I used Roasted Red Pepper and Spinach Chicken Sausage but I have also used the Chicken and Apple Sausage, and it's super good, too. Put it together with chopped fried cabbage to make this Chicken Sausage and Cabbage Stir Fry in about 30 minutes. What a wonderful pairing! It's a great combination of deliciousness, and would be perfect on a cold winter's evening, too.

What You Need

Chicken Sausage and Cabbage Stir Fry Recipe
Chicken Sausage and Cabbage
- 1 tablespoon olive oil
- ½ head of cabbage shredded or sliced thin, about 4 cups
- 3 Roasted Red Pepper & Spinach Chicken Sausages 90g each, cut in 1-inch rounds
- Put the oil in a large skilled and heat for a minute or so until hot.
- Brown the sausage pieces in the pan over medium heat for about 5 minutes.
- Add the cabbage and stir frequently until the cabbage is crisp tender and starting to brown, about 15 minutes.
- Add a little water or oil if the pan gets too dry.
- Serve hot.
